Well, we're done messing around. This here is a representation of the kind of kismet that feels rewarding, yet strangely undeserved. Oh, but we're talking about beer. Right. So, New England IPA. Made with a massive amount of malted and flaked oats, which lend a silky-smooth, unctuous mouthfeel; a massive amount of nü-skool American hops that leave impressions of fruit at it's wettest; and a yeast strain that would otherwise be relegated to the trash heap were it not for it's ability to transform hop-derived glycosides into the rarest of esters (maybe even something polyol-adjacent - more later). All in all, it has little to do with Freeport, ME, and more to do with that good wet juice that heads are seeking. Fill 'er up, cap'n.

Barrel-aging is the gift that keeps on giving, so we gifted our classic Christmas Ale to a set of bourbon barrels, wrapping it with even more jolly holiday flavor.

We start with our golden stot, which is brewed with less of the roasted malt that gives traditional stouts their dark color with slight hints of toffee and coffee, and then age it for 9 months in Cleveland Whiskey Bourbon Barrels. The aging process gives the beer a solid bourbon flavor with a smooth finish and bumps the abv up to 9.0%

Brown ale exists in our modern times (on the big scale) as a pale lager with coloring added. At Bookhouse, we value tradition and idiosyncrasy, so naturally we took the concept back to its roots. To a firm base of English pale malt (and a touch of flaked corn for that prewar flavor) we add brown malt, chocolate malt, and a blend of mid-range Continental special crystal malts. Just a drizzle of molasses and a fruity ale yeast, and we cap off this sessionable delight with aplomb. Cheers!

Five years in the making, this is a Flemish-style Sour Red. It’s a solera blend aged in our big oak foeder tanks, five years ago we filled our 300 gal. foeder with red and aged it two years before bottling of that batch in 2021. We left behind of the first batch and topped it up with fresh beer, and after aging for an additional three years, we now have a blend of 5 and 3 year old beer. This builds complexity and continuity by including small amounts of well-aged beer.What’s it taste like? Going into the foeder it’s a surprisingly boring English-style ale. A special blend of Brettanomyces, Lactobacillus, and Pediococcus takes its sweet time transforming the beer into something completely different. Vinous raspberry, cherry pie, and red currant, with deeper undertones of leather, chocolate, and oaky vanilla. The acidity is extremely drinkable and balanced by malt sweetness. These “Burgundies of Belgium” are truly wine-like and the time in medium toast oak lends a tannic structure

Brewed with floor-malted Maris Otter, flaked barley, and roasted malt, this deceptively light stout was modeled after an Irish classic - and then we added ~100 lbs of oyster shells to the boil. This addition helps to improve "clarity of flavor" and increase the smooth factor. Notes of dark chocolate and roast predominate against a smooth malt background. Our latest iteration in attempting to capture joy and sunshine in a glass of beer comes to you via this brilliant little sipper. We start with our standard Gose-style base, then overlay gallons and gallons of fruit puree, this time in the form of mango and pineapple. The end result is acidic and sweet, with intense mango and pineapple aromas, and a soft salinity/biscuit combo in the finish, offset by intense vanilla sweetness.

A celebration of Ohio! We used a blend of grains from Haus Malts in Cleveland, hops from Barn Talk in Wadsworth, and maple syrup from River Stone Farm in Geagua Country to create this homage. Built upon a foundation of German pils and vienna malts, we used 80 lbs of locally grown Lieber hops from Frog Valley Farms to build this bright, fresh hopped Pilsner. Crackery grain and floral aromas greet you on the nose, while the flavor delivers notes of sweet grain, light citrus, and a floral herbality that leads to a clean, soft bitterness.
